A True Love Story

The year was 1940, and pie suppers were a big social event. Today, we have dating apps; in the 1940s, they had pie suppers. My, how times have changed!

My grandma had prepared her chocolate pie and took it to a pie supper, and that’s where she met my grandpa. Unfortunately, his little brother purchased my grandma’s pie before he could, so he ended up buying someone else’s. My grandpa bribed his younger brother with a nickel to swap pies with him. My grandma and grandpa began dating after that, fell in love, and lived happily ever after.

I’ve experimented with other pie crust recipes, but I keep coming back to this one. Why? Because it checks off all the boxes.

Ingredients Needed for Easy Pie Crust

This is a 4 ingredient pie crust! Yes, you read that right, only four! You probably have all the ingredients in your pantry.

  • All-purpose flour
  • Vegetable oil or canola oil
  • Salt

To Roll or Not to Roll

There are tons of pie crust recipes, and most of them are recipes you have to roll out. This is fine, but if you are short on time and want a no-fuss pie crust, this is a great one to try.

The rolled pie crust is more traditional than the no roll pie crust.

Not rolling out a pie crust can make for a mess-free process, which makes me love this recipe even more.

This pat in pan pie crust is a great one for kids to make or if you are new to baking pies, as well as busy adults. You just mix, pat in the pan, and boom, you’re done! Easy Peasy!

Just a little note:

If you have a grandparent, parent, or loved one that bakes and cooks with no recipe, make sure to document the recipe.

In this particular recipe, my mom doesn’t use a measuring cup or measuring spoons! lol! She does it all by feel and a whole lot of love.

I’ve got the love, but I always use a measuring cup and measuring spoons. When she was teaching me to make this recipe, she used a large mug and regular silverware spoons.

For me to get the recipe, she would eyeball her ingredients in her mug, and then I’d measure them in the measuring cup or spoons, and I’d document everything.

My mom has made this no roll pie crust so many times that she has a feel for the proportions. She knows how to make it by look and feel. Me, on the other hand, well, I’m a work in progress. Goals!

If you have a loved one that has recipes and they measure by handfuls, mugfuls, or pinches, I encourage you to shadow them in the kitchen so you can get the recipe. Measure the ingredients with measuring cups and spoons or weigh them with a food scale and write them down.

You could even video them making the recipe and make sure to ask them lots of questions. Document it all and practice making the recipe, and ask questions. I put my favorite family recipes in a cute recipe binder like this one.

Tips for Making a Great Pie Crust

  • Use Ice cold water: There are a few reasons why you want to use cold ingredients while making a pie crust. If we were using butter, lard, or shortening, it is to help keep the fats from melting. We are using oil, so we aren’t concerned about that, but we are concerned about having a tender pie crust. Flour doesn’t absorb cold water very well, which helps keep our dough tender.
  • Don’t overmix: Be gentle. You want to mix until the dough holds together.
  • Don’t overhydrate: Using too much water can make your crust tough and chewy. We want to achieve a tender and flaky crust.
  • Choose the right pie pan: You can purchase a ceramic, glass, or metal pie pan. A glass pie plate is excellent if you are new to pie baking. It allows you to see how your crust is baking. I have some with handles like this, making it easy to move around. I’m in the market for a metal or a ceramic one. (My mom uses these disposable ones and loves them.)
  • Keep it Cold before baking: I will put my pie crust in the refrigerator while my oven is preheating.
  • Blind Bake or Not: This will depend on what your recipe says. When blind baking, you want to line the chilled dough with parchment paper or a large coffee filter, then fill it with weights. If you don’t have store-bought ceramic or metal weights, use dried rice or beans or use a fork and poke holes on the inside and bottom of the crust to allow the steam to escape.

Let’s get Baking

I’ve used this no-roll pie crust recipe for various pies: old-fashioned chocolate pie, coconut cream, pecan, pumpkin, and even apple. I’ve also used it for a blueberry cobbler! Yummo! Because you press it in the pan instead of rolling it out, making pies with a top crust makes it a bit more challenging. Not impossible, just a bit fussier.

Let’s get started.

First, gather your ingredients and a medium-sized bowl.

Preheat your oven to 375. (If your recipe calls for a baked pie crust).

Mix your flour and salt. Add canola oil and ice-cold water.

Mix with a fork until well combined, and it forms a soft dough. DON’T overmix!

Press evenly into your pie plate using your hands.

Follow the instructions for your pie recipe. Do you need to pre-bake it or not?
