How to make Delicious Mexican Wedding Cookies
Have you ever eaten or smelled something, and it made you feel nostalgic? Every time I eat Mexican Wedding Cookies, that’s what happens to me. My Grandma would make these every Christmas, and they were always the ones I would eat first. Mexican wedding cookies are delicious and are hands down my favorite Christmas cookie and possibly my favorite cookie in general. I can’t believe I just said that, but it’s true. They are scrumptious!
The first bite of these rich, delectable cookies will take you on a buttery, nutty and sweet journey that ends with a delicious melt-in-your-mouth experience.
I love them with a cuppa of tea or coffee in the morning. Who needs donuts when you have Mexican Wedding Cookies? I think I may have some for breakfast in the morning. No judgment, please. lol!
I make these cookies every year and usually make several batches. They are so easy to make and everyone always loves them. They taste amazing! Trust me when I say you won’t be able to just eat one!

How many names does the Mexican Wedding cookie have?
How many names can a cookie have? Apparently, a lot.
We grew up calling these cookies Mexican Wedding Cake cookies but they go by different names in virtually every region of the world, but they all share the same basic ingredients. The difference lies in the shape and types of nuts used to create these delectable morsels of goodness.
Mexican wedding cookies have many different names. Some people call them Mexican Wedding Cakes, Polvorones, Cocoons, Russian Tea Cakes, Pecan Sandies, Snow Balls, Italian Butterballs, and that’s to name a few. No one knows where the cookie originated, but it is said to have come from Mexico when Spanish missionaries brought ingredients back home.
These cookies are perfect for gatherings because they come together quickly, and there is no dough to chill or roll out. You can make them with your kids as a fun baking project. It’s a super easy recipe to follow, and you’ll feel like a pro at the end of it.
Letโs make some Mexican Wedding Cookies!!!
Mexican wedding cookies are not only delicious but they use common ingredients you probably already have in your pantry… All you need is six ingredients; butter, powdered sugar, flour, vanilla, nuts, and salt.
Note: I use real butter for all my baking and cooking needs. You will definitely want to use real butter when making these cookies. It will make them more flavorful and give the cookie the perfect crumb.
First things firstโฆPreheat your oven to 375 degrees.
- Mix the butter, sugar, and vanilla until well combined, work in flour, salt and nuts until the dough holds together.

- Shape the dough into 1 inch balls and place them on ungreased baking sheet, like this one. Bake for 10-12 minutes, or until set, not brown. Do NOT overbake.
- While warm roll in powdered sugar. Once cooled, roll in powdered sugar again.
- These cookies are best eaten within 2-3 days, but you can store them in an airtight container for up to two weeks. You can also freeze the dough and thaw it when ready to make them.
Tips
- Use REAL butter! Trust me you will be glad you did. It gives these delicious cookies the perfect crumb and flavor.
- Do NOT overbake! You will be tempeted to want to brown them but there is no need. Bake them for 10-12 minutes.
- Roll them in powdered sugar TWICE. Once while warm and then again once they are cooled.

Instructions
- Mix butter, sugar and vanilla, work in flour, salt and nuts until dough holds together.
- Shape dough into 1" balls and place on ungreased cookie sheet.
- Bake 10 to 12 minutes or until set, but not brown.
- While warm roll in powdered sugar. Cool, then roll again.
