Normally, to make this recipe, I would cook a chicken and de-bone it, which can take time. (It’s yummy to make this way if you have time.)
Several years ago, I made some of the best chicken pozole verde I’d ever made, and it was the easiest/quickest.
My husband had smoked some chicken, and I used the leftover smoked chicken in the pozole.
Oh. my. word. It was amazing!
The smoky meat infused the chicken broth and added a whole new flavor and depth to my pozole verde.
It tasted like it had been cooking for hours, but it only took about 30 minutes from start to finish.
Then one day, I decided to use a rotisserie chicken.
Although it lacked the smoky flavor. The pozole was still hearty and delicious.
Since then, If I don’t have leftover smoked chicken and I’m running short on time, I’ll grab a rotisserie chicken.
You could easily use the leftover cooked chicken you have in the refrigerator.
If you ever have leftover smoked chicken…I highly recommend using it in the recipe. You won’t regret it!

Pozole De Pollo Recipeย
Ingredients for Chicken Pozole Verde
2-3 cups shredded chicken from leftovers, smoked chicken, or rotisserie
2 (15 oz) can white hominy, drained and rinsed
1 (4 oz can diced green chiles, undrained)
-1 tablespoon olive oil
-1 white onion, chopped
-4 cloves garlic, minced
-3 cups chicken broth (I use 3 t. of better than bouillon plus 3 cups water)
-1-2 cups water
-1 teaspoon cumin
-1 jar of Herdez Salsa Verde
-Salt and Pepper to taste
In a large pot or Dutch oven, heat the olive oil over medium heat. Add the onion, jalapeno (if using), and minced garlic (here’s a great garlic mincer if you don’t have one) and cook until softened, about 5 minutes.
Add the chicken broth, water, green chiles, salsa verde (use half of the jar and add more to taste), and juice of a lime. Bring to a simmer.
Add the shredded chicken and drained hominy and cook for 10-15 minutes.
Serve with your favorite toppings. Enjoy!

- 1 onion, chopped
- 1 jalapeno, whole
- 1 4 oz can of chopped green chilis
- 4 cloves of garlic, minced
- 1-2 tbsp olive oil
- 1 teaspoon ground cumin
- 1 jar Herdez Salsa Verde
- 2 15 oz. can of white hominy
- 4 cups chicken broth
- 2 cups water
Toppings:
- shredded cabbage
- sliced radishes
- sliced or diced avocado
- shredded cheese
- tortilla chips
- diced jalapeno
- sour cream
Instructions
- In a large pot or Dutch oven, heat the olive oil over medium heat.
- Add the onion, whole jalapeno, and garlic and cook until softened, about 5 minutes.
- Add the chicken broth, water, salsa verde (use ยฝ jar and add more to taste), juice of one lime, and green chiles. Bring to a simmer.
- Add the shredded chicken and drained hominy and cook on low to medium heat for 10 minutes.
