Method
- In a large pot or Dutch oven, heat the olive oil over medium heat.
- Add the onion, whole jalapeno, and garlic and cook until softened, about 5 minutes.
- Add the chicken broth, water, salsa verde (use ½ jar and add more to taste), juice of one lime, and green chiles. Bring to a simmer.
- Add the shredded chicken and drained hominy and cook on low to medium heat for 10 minutes.
- Let simmer and slice and prepare toppings.
- Serve with your favorite toppings. Enjoy!
