Method
- Grate the cucumber into a bowl. Press out moisture and drain.
- Add greek yogurt to a bowl. Add in cucumber, lemon juice, and garlic. Stir well.
- Toss in chooped parsley, chopped dill, salt and pepper. Mix well.
- Drizzle with a little olive oil for garnish.
- Serve chilled with pita bread, fresh veggies, grilled meats, or as a topping for gyros or falafel.

Optional Additions:
Store in an airtight container in the refrigerator for up to 3 days. Stir well before serving.

- A sprinkle of mint leaves for added freshness
