Old Fashioned Coconut Pie

Ingredients
  

  • ¾ cup sugar
  • ½ cup flour
  • pinch of salt
  • 3 cups milk
  • 3 egg yolks
  • 1 tsp vanilla extract
  • cup butter
  • 1 cup coconut (can add ½ cup more)

Method
 

  1. Combine sugar, flour, and salt. Whisk together to remove flour lumps.
  2. Whisk or stir in milk and egg yolks.
  3. Cook over medium heat, constantly stirring to prevent scorching.
  4. Once the mixture has come to a boil and thickens, add vanilla, butter, and coconut.
  5. Pour mixture into baked pie crust and top with meringue.
  6. Sprinkle with coconut. Bake in 400° oven until brown.

Notes

TIP: You can use half whole milk and half coconut milk if you'd like. The coconut milk I'm talking about is in a can, and you can usually find it near the Thai food products at the grocery store.
Microwave Instructions for Coconut Pie Filling:
Combine ingredients as stated above. 
Cook filling in the microwave for approximately 8 minutes, stirring every 2-3 minutes. 
When the mixture boils and thickens, add butter, vanilla, and coconut.
