Method
- Combine sugar, flour, and salt. Whisk together to remove flour lumps.
- Whisk or stir in milk and egg yolks.
- Cook over medium heat, constantly stirring to prevent scorching.
- Once the mixture has come to a boil and thickens, add vanilla, butter, and coconut.
- Pour mixture into baked pie crust and top with meringue.
- Sprinkle with coconut. Bake in 400° oven until brown.
Notes
TIP: You can use half whole milk and half coconut milk if you'd like. The coconut milk I'm talking about is in a can, and you can usually find it near the Thai food products at the grocery store.
Microwave Instructions for Coconut Pie Filling:
Combine ingredients as stated above.
Cook filling in the microwave for approximately 8 minutes, stirring every 2-3 minutes.
When the mixture boils and thickens, add butter, vanilla, and coconut.
