Servings: 6 servings
Course: Dessert
Cuisine: American

Ingredients

  • 1 cup sugar
  • 1/3 cup all-purpose flour
  • 4 tbsp cocoa
  • 3 cup milk
  • 3 egg yolks
  • ¼ tsp salt
  • 1 tsp vanilla
  • 2 tbsp butter

Method

  1. Mix all your dry ingredients with a wire whisk in your skillet or pan of choice. Make sure to remove all the lumps of flour and cocoa.
  2. Separate egg yolks, saving the whites for meringue.
  3. Place egg yolks in a bowl and add milk, stir until blended.
  4. Pour milk and egg mixture into dry ingredients and stir well.
  5. Cook on medium heat, stirring constantly to prevent scorching. Do not leave unattended.
  6. Once filling thickens add the butter and vanilla extract and mix well. Remove from heat.
  7. Pour it into your pre-baked cooled pie shell and spread it out evenly.
  8. Top with meringue and bake accordingly or serve with whipped topping.
  9. Cool on a wire rack and serve. Refrigerate any leftovers.

Notes

It may seem like it's not thickening properly but don't worry, it will almost immediately as you continue cooking it on the stovetop for a few minutes. Just continue stirring to prevent scorching.
To make a gluten-free version, replace the flour with cornstarch and use a gluten-free pie crust.
