Preheat oven to 325°
In a large bowl, combine the eggs, oil, sugar, and vanilla with a wire whisk. Stir well.
In a separate bowl, mix the flour, salt, baking soda, and cinnamon.
Add dry ingredients 1 cup at a time, mixing well until all the flour has been added. The mixture will be thick!
Stir in chopped apples and nuts. Combine well. As you stir and the apples combine with the batter, the juices and moisture from the apples will moisten the cake batter, and it won't be quite as thick.
Pour mixture and spread into a prepared bundt pan.
Bake for 1 hour, until done.
