- Preheat oven to 325°
- In a large bowl, combine the eggs, oil, sugar, and vanilla with a wire whisk. Stir well.
- In a separate bowl, mix the flour, salt, baking soda, and cinnamon.
- Add dry ingredients 1 cup at a time, mixing well until all the flour has been added. The mixture will be thick!
- Stir in chopped apples and nuts. Combine well. As you stir and the apples combine with the batter, the juices and moisture from the apples will moisten the cake batter, and it won't be quite as thick.
- Pour mixture and spread into a prepared bundt pan.
- Bake for 1 hour, until done.
Notes
Peel and core your apples and dice them into one and a half inch pieces (give or take).
Please be mindful that the baking time can vary depending on how juicy your apples are. I typically set my timer for 45 minutes and check it; if it's not done, I recheck it in 10-15 minutes. On average, it takes one hour to bake.
